Stewed Swift’s Nest

Stewed Swift’s Nest is a famous dish from the Chinese Han nationality which consists of swift’s nest, ham, pigeon eggs and other ingredients. The mellow soup in the dish is pure white with leaf-shaped pigeon eggs inside. It is usually served as the first course at eloquent banquets.

Swift’s nests are seven times smaller than inland swallow’s nests. They are created by a kind of swiftlets. After eating and digesting small fish and seaweed from the sea, the swiftlets build nests on steep cliffs with the murcus they secreted.

Stewed Swift’s Nest is palatable as well as nutritious. Swift’s nests have high levels of protein, carbohydrates, calcium, phosphorus, iron and other micronutrients which help with cell regeneration and immune system enhancement.
