Spring Rolls in Sour Soup

Spring Rolls are a typical food in Guiyang. They are handmade palm-sized tortilla rolls filled with seasonal vegetables such as bean sprouts, cucumbers and carrots with some fried beans added, and a teaspoon of chili paste dipping sauce. The shape of Spring Rolls in Sour Soup when rolled up looks like a baby in swaddling clothes, so people gave it the vivid name - “Siwawa” which means “little baby”. Local people (especially women) really love eating it.
