Minced Noodles

Minced Noodles is a delicious dish from Shaanxi Province, China, and comes in dozens of varieties. It is thin, chewy, smooth, oily, sour, spicy and fragrant, and the most famous of these noodles is Qishan Minced Noodles.

Qishan Minced Noodles requires more soup and less noodles, and highlights the sour and spicy taste. Characteristics of Minced Noodles come to the forefront when they are very hot and oily.

Cooking methods for Minced Noodles varies in different cities throughout Shaanxi Province with each place an exquisite cooking method, various ingredients and rich tastes. The most renowned dish, Qishan Minced Noodles, is all about its nine-word formula: “sour, spicy, fragrant, hot, less, oily, thin, chewy and smooth, and incomparable.” Minced Noodles plays a very important role in the Guanzhong area and is eaten in momentous occasions like weddings and funerals, holidays and festivals, celebrations for the first month of a newborn baby, celebrations for an elder’s birthday, receiving relatives and friends and so on.
