Naipizi

Naipizi is also called "Chaganyide", "Wurumu" and "Wurimo" in Mongolian. In Chinese it means “white food” and it ranks amongst the best dairy products for nutritional value.

It is made by firstly pouring fresh horse, goat, cow and camel milk into a pan, boiling on a low heat, then the skin is picked off with chopsticks and hung in a ventilated place where the surface forms a layer of wax-like condensed fat.

It’s simple to make, but requires a lot of materials. It is delicacy which is eaten when entertaining guests along with milk tea, milk fruit and fried rice, and is also indispensable both for dining at home and for using when worshiping one’s ancestors.
